If they were to put in themselves as contact for your domain, this would 
mean that anyone wanting to contact you would have to go through 
godaddy.com and godaddy.com would have to relay them to you. This is a 
service that requires staff, so godaddy.com is well within its rights to 
charge for it.

I would believe that those "most registrars" you are talking about, are 
web hotels as their primary business, so their default option is to 
register a domain for you but in their own name, so that you'll have to 
pay them to move the domain to another hotel.
